Vegetarian Acar recipe

It's really hard to get nice and healthy vegetarian acar here.Perhaps,i don't know the place to get it yet.I realize that most of the acar sold here are not vegetarian and they add in belacan(made from shrimp) in it. Due to my dislike to belacan and also to have a more healthy version of pickles, i decided to invent a simplified recipe. The result turned out to be successful.
Ingredients:

A. Vegetables and fruits

1. cucumbers 3
2. carrots 3
3. turnip 1kg
4. pineapple 2

B. Chili Paste

1. Dried chillies 16(presoaked for at least 30 minutes) and cut into small pieaces
2. Laksa flower 1 bud
3. lemon grass 4 stalks

C. Nuts
1. Peanuts 500 grams (toasted and peel of the skin). Then blend in a blender.
2. Toasted sesame

D. Brown sugar, sea salts, G-powder, apple cider vinegar

Methods:
1. Cut vegetables and fruits into thin strips then mix with some sea salt. Then set aside for half an hour. After that, drain all the water.
2. Ground the dried chillies, laksa flower and lemon grass into paste. Then cook in a wok(stir fry) and add in half bowl of water and add in some salt, sugar and g-powder. Then set aside to leave it to cool. Then add in half bowl of apple cider vinegar.

Then add in the cooked spices paste into the fruits and vegetables and add in half of the toasted peanuts which has been blended. and also add in some toasted sesame. Then leave it in the refrigerator for at least 1 day before you consume them.

Happy trying!
