Vegan Drunken Eggs Recipe

This is a Hakka dish.It is more common to cook drunken chicken(Chicken cook in glutinous wine and ginger). For this version, i substitute eggs instead as i don't fancy chicken. Besides that, i added in some black fungus, dried mushrooms and enoki mushrooms to make variety.
Chinese usually eat chicken wine dishes as a tonic for health. It becomes a norm for women in confinement to take this everyday. As Chinese believe that this dish can help the women in confinement to gain back their vitality and also re energize their body. This dish is a heaty dish and it is not recommended for someone who is lacking of sleep or having sore throat. It is a good dish in winter season!I love this dish very much. Certainly,glutinous wine is a very important ingredient to cook this. Usually, it is home made by elderly. I am lucky that i have my Grandma who knows how to make it. so let me share this recipe here.

Ingredients:
1. 4 eggs
2. 4 stalks of dried mushrooms(presoaked and cut into thin strips)
3.100grams Black fungus(pre-soaked and cut into thin strips)
4. 1 packet of enoki mushrooms
5. 1 bowl of glutinous wine
6. 1 bowl of water( if you prefer stronger wine taste, you may deduct water)
7. 100 grams of old ginger(cut into thin strips)
8. 4 tbsp sesame oil(for me, i used black sesame oil)
9. salt to taste


Methods
1. fried ginger,black fungus,mushrooms over medium fire for about 8 minutes. Then add in eggs and fried till cooked.
2. Add in glutinous wine and boil for 1 minute. Then add in water and boil for 1 minute.
3. Finally, add in salt to taste.
