Tempeh Salad Recipe

What is tempeh? Tempeh is is made from whole soybeans, and possesses all the health benefits of soybeans. Due to the fermentation process of tempeh, it changes the properties of the soybeans.

What are the benefits of tempeh?

1. It has high fiber content which is more than one people consume a day!

2. Tempeh is also easy to digest.Tempeh is a great choice for people who have difficulty digesting plant-based high-protein foods like beans and legumes or soy foods such as tofu. The process of fermentation makes the soybeans softer, since enzymes produced by the mould predigests a large portion of the basic nutrients. The Rhizopus moulds produce an enzyme phytase which breaks down phytates, thereby increasing the absorption of minerals such as zinc, iron and calcium.
The fermentation process greatly reduces the oligosaccharides that make beans hard to digest for some people. Studies have shown tempeh to be essentially non-flatulent and producing no more gas than non-legume food.

3. Tempeh is contains very low-sodium!Unlike miso which has high contain of sodium.

4. Contains natural antibiotics

5. Good for diabetic patients who tend to have problems with animal source of protein.The protein and fiber in tempeh can also prevent high blood sugar levels and help in keeping blood sugar levels under control.

Isn't tempeh amazing food?? However, this food is only famous among Malay. :(

Here is the tempeh salad i made and with the salad dressing I invented!Looks good?
I added toasted peanuts and sesame to make the salad has some crunchy bites!

Ingredients:

1. 2 slice of purple cabbage
2. half cucumber
3. 100 grams of turnip
4. half carrots

All the vegetables are shredded.

For the tempeh, cut into small pieces and bake in an oven for about 10 minutes,

Then mix all the vegetables, nuts and tempeh with salad dressing. It is really a healthy food!!
